Fried Chicken

INGREDIENTS

1 teaspoon ground black pepper
1 teaspoon dry mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
30 saltine crackers
2 tablespoons all-purpose flour
1-2 egg
Vegetable oil
Chicken (preferably skinless)

 

DIRECTIONS

1.) Combine 1 tsp of each: black pepper, mustard power, garlic powder, onion powder, paprika. Blend/mix well.

2.) Place 20-30 saltine crackers in bowl and thoroughly crush. Add 2 tablespoons all purpose flour.

3.) Beat egg(s) in small bowl.

4.) Add oil to pan. Err on the side of too much. Begin heating, 6-7 (scale of 10).

5.) Sprinkle spice mixture over chicken as desired.

6.) Place 1 piece of chicken in crumb & flour mixture. Roll and cover in powder.

7.) Place in pan. Repeat process with all pieces.

8.) Rotate chicken ever 1-3 minutes. Once both sides are brown reduce heat to 4 and cover with lid.
