Blueberry Muffins 

Ingredients
Flour
Baking Powder
Sugar
Shortening (Crisco)
Milk
Eggs
Blueberries

Instructions
1.) Sift into a bowl:
                            2 cups of flour
                            3 teaspoons of baking powder
                            1 cup of sugar

2.) Add shortening the size of a small egg, and 3/4 cup of milk.

3.) Stir until mixed. No longer.

4.) Lightly flour 1.5 to 2 cups of blueberries. Add blueberries to mixture.

5.) Preheat oven to 400. Bake muffins for 15-20 minutes.

Note: They are not good for long. After 4 days the quality goes way down.

Hot Fudge Sauce

 

1 Cup Sugar

1.5 oz. of Chocolate

>1/2 cup of milk (slightly under)

1 Tablespoon Butter/Margarine

 

Add all ingredients to sauce pan and slowly heat to mix. Avoid burning.

 

Once mixed bring to a boil for 5 minutes.

 

Remove and add 1 teaspoon of vanilla

Cranberry Sherbert 

Ingredients:

            2 bags fresh cranberries

            4 1/8 c. water

            2 cups of sugar

            1 Tablespoon Gelatin

            1/3 cup of lemon juice

 

1.) Boil cranberries 4 & 1/8 cups water for 10 minutes. (Save Water)

2.) Put the cranberries and WATER through a sieve, or food mill.

3.) Add 2 cups of sugar (2 & 1/2 if you want sweeter)

4.) Soak 1 Tablespoon of gelatin in ¼ of a cup of water to dissolve it.

5.) Add dissolved gelatin to cranberries.

6.) Add 1/3 cup of lemon juice (dash of salt if desired).

7.) Mix ingredients.

8.) Place mixture in a shallow tray or oblong glass dish (purex is best), and freeze.

9.) When frozen solid remove, cut into 3” square pieces and let sit in room temperature for 2 minutes before serving.

Rum Cake

Ingredients

1 Yellow Cake Mix (Duncan Hines)

1 small box of vanilla pudding

4 eggs

¾ cup of water

¼ cup of amber colored rum

½ cup of vegetable oil

 

Instructions

1.) Grease and Flour baking pan

2.) Beat all above ingredients in mixer until blended.

3.) Pour batter into pan. Bake at 325 for 1 hour, check at 55 minutes.

4.) Let cool in pan for 20 minutes. Remove.


Frosting (optional)

Ingredients

1 cup sugar

¼ cup of water

1 stick of melted butter

 

1.) Boil for 5 minutes, stirring in ingredients.

2.) Make small holes in the cake and pour all but 1/8 of a cup of frosting into the cake.

3.) Let soak for 30 minutes-1 hour.

4.) Pour remaining frosting onto cake.
